The process begins as fish—either with the head still on or pre-gutted with the belly opened—is fed onto a guide that leads them over the belly cutting blades and cleaning wheel. Next, drive belts advance the fish to a series of specialized blades that remove the backbone and offal, which are expelled through a dedicated ejection channel. The fillets then pass through rib removal blades to eliminate any remaining bones before exiting the machine as clean, ready-to-pack fillets.
